  • 500 grams charlotte potatoes (or any small waxy ones)
  • 1 tablespoon olive oil
  • 225 grams chorizo (sliced)
  • 1 bunch spring onions (cut into pieces)
  • 4 eggs
  • 17⅔ ounces charlotte potatoes (or any small waxy ones)
  • 1 tablespoon olive oil
  • 7⅞ ounces chorizo (sliced)
  • 1 bunch scallions (cut into pieces)
  • 4 eggs

Method

  • place the potatoes in a pan, cover with water and bring to the boil, simmer for 5 mins. Drain and stir in the olive oil fry the potato in a griddle or frying pan until golden (about 6 to 8 mins may be done in 2 batches to be sure all are crispy and golden)
  • leave the potatoes to the side and add the chorizo and spring onions in the frying pan for a few mins and then re add the potato,stir
  • meanwhile poach the eggs in boiling water until the eggs are cooked but still runny
  • put the potato mixture on a plater and serve with a poached egg on top
