Introduction

Living in South Africa (on the South Coast near Durban) I love curry. The local hot Indian curry is very enjoyable, but I far prefer the (milder) Cape Malay curry.

Ingredients

Serves: 4 - 6

Metric Cups
  • 700 grams beef (cubed - to the point of being wasteful I cut off all fat and especially any sinewy parts)
  • 200 grams baby carrots
  • 1 small butternut squash (peeled and cut into cubes)
  • 200 grams squash (if big cut in half)
  • 200 grams courgettes
  • 1 tablespoon mild cape curry (yellow)
  • 200 grams baby potatoes (in skins)
  • ½ large onion (sliced)
  • 200 grams onions (small)
  • 1 pinch of cayenne pepper
  • 1 teaspoon mustard
  • 1 teaspoon garlic (crushed)
  • 1 teaspoon crushed fresh ginger
  • 100 grams peaches (dried, soaked)
  • olive oil (or grapeseed oil)
  • 1 pinch of salt
  • pepper
  • 100 millilitres vinegar
  • 125 millilitres brown sugar
  • warm water
  • ½ packet instant soup (curry flavour - white onion or mixed vegetable soup will also do)
  • 24¾ ounces beef (cubed - to the point of being wasteful I cut off all fat and especially any sinewy parts)
  • 7 ounces baby carrots
  • 1 small butternut squash (peeled and cut into cubes)
  • 7 ounces squash (if big cut in half)
  • 7 ounces zucchini
  • 1 tablespoon mild cape curry (yellow)
  • 7 ounces baby potatoes (in skins)
  • ½ large onion (sliced)
  • 7 ounces onions (small)
  • 1 pinch of cayenne pepper
  • 1 teaspoon mustard
  • 1 teaspoon garlic (crushed)
  • 1 teaspoon crushed fresh gingerroot
  • 3½ ounces peaches (dried, soaked)
  • olive oil (or grapeseed oil)
  • 1 pinch of salt
  • pepper
  • 4 fluid ounces vinegar
  • 4 fluid ounces brown sugar
  • warm water
  • ½ packet instant soup (curry flavour - white onion or mixed vegetable soup will also do)

Method

Nollie's Curry Potjie is a community recipe submitted by nolliebee and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Start by making a curry mixture by dissolving the curry powder, mustard, ginger and garlic, brown sugar and vinegar in 500ml hot water.
  • Place pot on the heat (electricity, gas or coals) and add some olive oil and the cut up large onion. Braise onion till soft and add meat and small quantity of curry mixture. Braise till meat starts to colour.
  • Add potatoes and butternut and the rest of the curry mixture. Add some water if pot is too dry. Cook till potatoes are softening.
  • Add the rest of the vegetables (small onions, georgettes, patty pans and baby carrots) and water to keep pot from drying out.
  • Add peaches , cayenne pepper, salt and pepper. Stir regularly and cook for half hour or until all vegetables are soft.
  • Add instant curry soup powder to thicken
  • Serve with rice.

    Made in a potjie (traditional black cast iron pot on legs over coals) but works just as well in casserole on stove or gas.
