Ingredients
Makes: 12
- 300 grams self-raising flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 2 teaspoons mixed spice
- 100 grams pecan nuts (or walnuts)
- 140 grams dried fruit (cranberries, raisins, tropical - whatever you fancy)
- 100 grams light brown muscovado sugar
- 11 ounces self-rising flour
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 2 teaspoons pumpkin pie spice
- 4 ounces pecan nuts (or walnuts)
- 5 ounces dried fruit (cranberries, raisins, tropical - whatever you fancy)
- 4 ounces light brown sugar
Method

- Layer all the ingredients in a 1 litre jar (I usually Write the following use a Kilner jar) Then write the method as follows on a gift tag:
- Tip the contents of the jar into a large mixing bowl. Make a well in the centre and add 2 beaten eggs, 300ml/½pt milk and 100g/4oz melted butter.
- Mix lightly to a soft batter.
- Divide between 12 muffin cases.
- Bake at 190C/fan 170C/gas 5 for 18-20 mins.

Additional Information
I have made these as pecan and chocolate chip before by replacing the spices with cocoa powder and the dried fruit with chocolate . Always layer the ingredients with the flour on the bottom.
