Introduction

I have in the past made these as Christmas gifts because of the festive flavours although a play with the ingredients and it could be used for any occasion

I have in the past made these as Christmas gifts because of the festive flavours although a play with the ingredients and it could be used for any occasion

Ingredients

Makes: 12

Metric Cups
  • 300 grams self-raising flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons mixed spice
  • 100 grams pecan nuts (or walnuts)
  • 140 grams dried fruit (cranberries, raisins, tropical - whatever you fancy)
  • 100 grams light brown muscovado sugar
  • 11 ounces self-rising flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 2 teaspoons pumpkin pie spice
  • 4 ounces pecan nuts (or walnuts)
  • 5 ounces dried fruit (cranberries, raisins, tropical - whatever you fancy)
  • 4 ounces light brown sugar

Method

  1. Layer all the ingredients in a 1 litre jar (I usually Write the following use a Kilner jar) Then write the method as follows on a gift tag:
  2. Tip the contents of the jar into a large mixing bowl. Make a well in the centre and add 2 beaten eggs, 300ml/½pt milk and 100g/4oz melted butter.
  3. Mix lightly to a soft batter.
  4. Divide between 12 muffin cases.
  5. Bake at 190C/fan 170C/gas 5 for 18-20 mins.

I have made these as pecan and chocolate chip before by replacing the spices with cocoa powder and the dried fruit with chocolate . Always layer the ingredients with the flour on the bottom.
