Ingredients

Serves: I believe approx. 6

Metric Cups
  • ½ litre full fat milk
  • 160 grindings honey
  • 4 egg yolks
  • 1 shot rum
  • 15 grams clear gelatine (sheets)
  • 200 grams blackberries
  • 40 grams hazelnuts (toasted, chopped)
  • ⅞ pint whole milk

  • 1⅖ ounces hazelnuts (toasted, chopped)

Method

  • Soften gelatin in cold water
  • Pour honey into saucepan, on low flame heat until thoroughly liquid; unite milk pouring slowly in to honey and mixing until uniform;whisk egg yolks and incorporate into milk mixture stirring continuously with wooden spoon, take off fire.
  • Take gelatin and squeeze until all water is out, let melt into hot mil mixture;add rum and stir well.
  • Pour mixture into a capable 7dl pudding form, straining as you pour;let stand at room temp.
  • then transfer to refrigerator for at least 6 hrs.
  • To serve, put form in warm water and turn pudding onto serving plate. Decorate with blackberry's and hazelnuts and of course more honey drizzled all over as you wish.

    I suppose you could substitute a lot in this recipe. For example, I've also made this with frangelico liqueur and just hazelnuts. Perhaps you can also use a more fragrant honey like orange flower honey and perhaps grand marnier liqueur, etc.
