Introduction

The fresh herbs make this such a delicious pizza. The chillis and herbs also come out of our garden which makes the pizza even that more special.

  • Heat oven to 220C. Halve the baby tomatoes and marinate in a bowl with 1 Tbs of olive oil and generous amounts of salt and pepper.
  • Take a pre-bought pizza base (must be thin) and smear the top with tomato paste. Then sprinkle the grated mozarella so the top is covered. Not too much though. Place in the oven.
  • Fry about 8 slices of streaky bacon and then chop into small pieces. When the pizza base in crisp (I place it on a rack so can feel the base by placing my finger underneath) and the cheese melted, take out.
  • Spoon the tomatoes (pip side down) over the pizza base, sprinkle the streaky bacon over and slice into 8. Sprinkle the amount of chilli you want over the pizza.
  • Then the best part. Place a generous amount of ripped basil over the pizza and then load it with fresh coriander. I love it completely covered so you can't see the pizza.
