Introduction

This is not one of my own, but definitely one of my favorites. Loaded with carrots, apple and raisin so you can fool your kids with absolutely no problem! Bake up a bunch and freeze for a quick healthy breakfast or nutritious snack.

Ingredients

Serves: 12

  • 2 cups sifted flour
  • 1¼ cups sugar
  • 2 cups grated carrots
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 3 medium eggs
  • 1 cup raisins
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 apple (peeled and grated)
  • ½ cup chopped nuts

  • Prepare all ingredients before you begin (grate carrot/ apple, wash raisins, sift flour, grease and flour muffin pan).
  • Combine flour, sugar, soda cinnamon and ginger (if desired).
  • Stir in carrots, raisins and nuts.
  • In a separate bowl, mix eggs, oil, apple and vanilla. Add to flour mixture and stir until combined.
  • Spoon into greased muffin pan and bake at 350 degrees/ 180 degrees for 18-25 minutes.
