Lentil Patties

Fry onion and garlic ten minutes in a little olive oil. Add ½ tsp cumin, ½ teaspoon salt, ½ teaspoon pepper, ¼ teaspoon cayenne. Toast two thick slices seed bread and blitz in processor. Add 400g can lentils, rinsed, to onions in pan. Add bread to pan, cook about 5 minutes. Add 2 tbsp parsley. Return mixture to food processor and blitz till it all comes together. Form 6-7 patties (about 1 ½ tbsp big). Fry in olive oil about 5-6 minutes per side till browned.
