Chop the onion and garlic, cut the carrot in small cubes and put in the olive oil to fry. Add the beans and the coriander, season with salt and pepper, mix and let stay for 10, 15 minutes. Put the pastry dough in a balcony spread with flour in the centre of the mixture and roll as a snail. Cut in slices and put in a tray sprinked with flour. Mix the egg yolk and cover the slices with the help of a brush. Put in the oven for 15 min at 180 to 200 degrees. Serve the snails cold or warm
