Heat the oil in a large pot. Fry the onions and garlic gently. Add the remaining ingredients except for one banana. Cook for five minutes. Blend till smooth. Add the last banana and blend. Heat again gently; serve garnished with coriuander, lime and spring onion.

This soup is amazing and has a great coconutty flavour - the banana is not overwhelmong at all.

- 1 tin coconut milk
- 800 millilitres water
- 40 millilitres vegetable stock
- 2 millilitres white pepper
- 45 millilitres soy sauce
- 15 millilitres caster sugar
- 1 large red chilli (finely sliced)
- 5 large bananas (ripe)
- 2 bunches scallions
- 1 fluid ounce oil
- 4 cloves garlic
- 1 tin coconut milk
- 28 fluid ounces water
- 1 fluid ounce vegetable broth
- fluid ounce white pepper
- 2 fluid ounces soy sauce
- 1 fluid ounce superfine sugar
- 1 large red chile (finely sliced)
- 5 large bananas (ripe)
