Ingredients

Serves: 4

Metric Cups
  • 1 small chicken (seasoned)
  • 2 bay leaves
  • 750 millilitres chicken stock
  • ½ onion (with peel on)
  • 150 grams orzo pasta (or spaghetti lengths broken up into three)
  • 1 small chicken (seasoned)
  • 2 bay leaves
  • 26 fluid ounces chicken broth

  • 5⅓ ounces orzo pasta (or spaghetti lengths broken up into three)

Method

  • Wash the chicken and place it in the stock in a large pot.
  • Put the lid on. Bring to the boil.
  • Turn the stove down to the lowest setting and go shopping for an hour or so, till the chicken is tender.
  • Remove the chicken and place the pasta in the pot. Stir frequently til cooked as you will not have that much liquid.
  • In the mean time, skin and cut up the chicken (and debone if you are feeling re-energised).
  • Place chicken into pasta and leave for five minutes before serving.
  • You could add chopped red chilli, parsley or add peas to the pasta for the last 5 minutes.
