Ingredients
Serves: 4
- 300 grams penne pasta
- Spanish chorizo
- 400 grams chopped tomatoes
- 2 heaped tablespoons sour cream
- 3 spring onions
- Parmesan cheese
- sat and pepper (to taste)
Method

- Boil a pan of water. Be sure to salt it well.
- Once boiling, add the pasta to the pan and cook until al dente.
- Meanwhile, cook the Spanish chorizo on the barbecue or grill until brown. Slice the chorizo once cooked if preferred.
- Whilst the pasta and chorizo are cooking, chop the spring onions.
- Heat the chopped tomatoes in a pan until warmed through. Season to taste.
- Add the tomato mix and sour cream to the cooked pasta.
- Plate up the pasta, sprinkle over the chopped onions and place the cooked chorizo sausages on top
- Grate parmesan and season with salt and pepper to finish
