This is an easy to make pasta with alll the goodness. I toke something classic and twisted it a bit to suit what is in the fridge and what tastes good. I love the smooth texture with the occasional crispy touch. I love making it I hope you do to.

This is an easy to make pasta with alll the goodness. I toke something classic and twisted it a bit to suit what is in the fridge and what tastes good. I love the smooth texture with the occasional crispy touch. I love making it I hope you do to.

Ingredients

Serves: 4

Metric Cups
  • 1 packet noodles (any style, your favourite)
  • 1 punnet mushrooms
  • 2 tomatoes
  • 3 sprigs spring onions
  • 1 red onion
  • 2 cloves garlic
  • 1 packet bacon (good quality)
  • 125 millilitres fresh cream
  • 2 handfuls cherry tomatoes (red and orange ones)
  • salt (as much as needed)
  • pepper (as much as needed)
  • butter (if you have some black truffle butter that makes it amazing)
  • 2 tablespoons olive oil
  • 1 packet noodles (any style, your favourite)

  • 3 sprigs scallions
  • 1 red onion
  • 2 cloves garlic
  • 1 packet bacon (good quality)
  • 4 fluid ounces fresh cream
  • 2 handfuls cherry tomatoes (red and orange ones)
  • salt (as much as needed)
  • pepper (as much as needed)
  • butter (if you have some black truffle butter that makes it amazing)
  • 2 tablespoons olive oil

Method

  • Chop the red onion into rings and crush garlic Place these two into a semi hot pan with the butter just melted, sauté till soft.
  • Cut up the bacon into small strips and add to pan. You want to get your water going at this point it should come to a boil before you add the pasta.
  • Now chop the mushrooms, spring onion and tomatoes. Check your water it should be okay add the pasta and some salt and little olive oil. Add the mushrooms etc to the pan and turn the heat down just a little. this takes about 5-10 min till the mushrooms are soft. As soon as the mushrooms are soft. take it off the heat add little water and put it back on. thus you can create a juice from the pans ingredients.
  • Remove pasta once cooked, drain and add some butter and salt and pepper. Add cream, cherry tomatoes to the frying pan stir until the cream is warm. Making sure that the cherry tomatoes stay whole giving it more texture.
  • Pour over your pasta, finish with a sprig of rosemary and enjoy.
