Chicken Breasts With Goat Cheese

Mix together the goat cheese, parsley, chives, 1 Tbsp. olive oil and seasoning. Cut a pocket in each chicken breast and fill with the stuffing, securing the chicken breast with a wooden skewer if necessary. In a pan heat the rest of the olive oil together with the butter and when its hot put the chicken breasts in skin side down. Cook for 10 minutes until golden brown then turn the breasts over and cook for another 10 minutes. Alternately the breasts can be baked in a pre-heated 200ºC oven for 20 minutes.
