Chicken Satay Skewers

Cut meat into strips, squeeze juice from lime, crush garlic, combine in a bowl with soy sauce, peanut butter, honey. Marinade meat in the bowl for at least 3 hours. Place meat on skewers and grill for 3-4 mins on each side. Sauce: put remaining marinade in a pan, bring too boil, add coconut milk, cook for 1 min. serve skewers on a bed of rice and smother with the sauce. Enjoy.
