Date and Walnut Flapjacks

Heat oven to 180c, grease a 8in square baking tin. Put honey, butter, dates and walnuts into a pan, heat until the butter melts. The dates will turn fudgy and almost melt into the butter. Stir in the caster sugar and raisins if using. Stir in oats and mix well. Bake for 20minutes, cut into bars as soon as you take them from the oven but don't try to remove them from the tray until cooled.

I love these healthier flapjacks, good sugar in place of syrup and the dates make them soft and fudgy.

Mine has come out very soft, I thought it would harden once cooled but it’s falling apart... what went wrong?
I swapped the sugar for 50g of golden syrup to make them more gooey! Really like the fudgey dates x
Successful recipe, quick and tasty. I toasted the walnuts and added a handful of sultanas and about 15g toasted sunflower seeds - marvo!
