Blueberry Tart

Combine 1 cup/150g of the blueberries with the water, sugar, and flour in a saucepan on a medium heat. Cook and stir until thick. Add the butter and the salt. Once the butter is melted and incorporated, remove from heat and leave to cool. Mash to a puree (I just use a fork here). Fold in the remaining blueberries. Pour into a 10 inch/25 cm graham cracker crust. I always use a storebought pie crust, but feel free to make your own! Chill tart overnight. Whip the cream until the beaters leave light traces on the surface and serve with the tart.

- 1 heavy cream (for serving)

Additional Information
While cooking the blueberries/water/sugar/flour mixture, you don't have to be stirring the entire time - just make sure the mixture has really thickened before you add the butter. Otherwise, you will end up with chilled blueberry soup!
