Beat the egg yolks well, then add the melted butter, then the milk. Beat well. In a large mixing bowl, return the flour to the sifter with the baking powder, salt, and sugar. Make a well in the middle of the dry ingredients and add the liquid mixture. Combine in a few swift strokes using a rubber spatula. The batter should have a pebbled look similar to that of muffin batter. As with muffins, overmixing is ruinous! Beat the egg whites until stiff but not dry. Fold the whites into the batter until barely blended. Do not allow the whites to deflate! Bake. Serve immediately with maple syrup, whipped cream, and fruit...at least, that's how I always eat them!
Introduction
The waffles that my family makes for New Year's Day breakfast every year (granted that "breakfast time" on January 1st is usually had well into the afternoon...). These waffles are fluffy and good; whether or not they are technically Belgian Waffles or not, I don't know.

- 1¾ cups cake flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon sugar
- 3 eggs (separated at least)
- 2 tablespoons melted butter
- 1½ cups milk
