Coriander Kumara Salad

Chop kumara into rounds and then in half. You can either roast or boil - I like roast - kumara. While cooking mix the rest of the ingredients but not the cashews in a bowl and leave to sit for the flavours to really melt into each other - this is am important step. when kumara cooked and cooled a bit mix ALL together and either eat or refrigerate for later. This recipe tastes AMAZINGLY much better than you can imagine! Happy eating.
Introduction
A zesty summer salad that can be turned into a meal by adding chicken or bacon. Very fresh tasting. Can be eaten warm or cold - I prefer it warm but somehow as with all good things it seems to taste even better the next day!!

- 4 medium kumera
- 2 avocados
- ½ cup cashew nuts
- 3 scallions
- 2 tablespoons lemons (rind)
- ¼ cup lemon juice
- ¼ cup oil
- 1 tablespoon sugar
- ¼ cup cilantro
- 1 pinch of salt
- 1 pinch of pepper
