Party Sandwiches

Stacks of gourmet sandwiches.

Ingredients

Serves: 4-6

  • bread (light, medium or hard crusted sandwich bread, slices)
  • olive oil (or vegetable oil, for brushing)
  • mascarpone cheese
  • 8 ounces peaches (tinned, slices)
  • 8 ounces pears (tinned, slices)
  • apples (4-5 small slices)
  • ½ cup roughly chopped walnuts
  • 6 tablespoons pear jam (or apple or apricot jam)
  • 14 slices smoked gouda cheese
  • turkey bacon (3 strips, diced)
  • 6 eggs (whisked in a bowl in advance)
  • 2 tablespoons chopped Greek oregano (or a pinch of dried oregano)

  • In a large skillet on med high heat, sautee bacons and add eggs and cheese until eggs are set and cheese is melted. Season with salt, pepper, and oregano. Set aside.
  • Brush one side of all bread slices with oil. Prepare Panini or sandwich press.
  • Make one type of sandwich by spreading mascarpone, peach, pear, and apple slices, jam, and walnuts. Sandwich the second type, using egg and cheese mixture, gouda slices, and additional salt and pepper. Press down and grill in panini press or other sandwich press.
  • When ready, slice into 4 equal triangles. Stack them up and insert a sandwich toothpick.
  • Make as many sandwiches as you like. Arrange in platters for parties or serve in individual plates with coffee or tea for breakfast or with chips, dips, and tossed salad or soup for lunch.

    They're also ideal for tea time or after school snacks for kids.
