In a large bowl, whisk together the yeast and warm water until bubbles appear. Add honey and whisk to dissolve. Add flour, salt, and olive oil. Mix well and add more flour if the mixture is too sticky. Knead until a smooth and soft dough forms. Leave in bowl covered with stretched plastic wrap. Leave dough wrapped in a kitchen towel in a warm spot. Several hours later, when dough has risen to twice its size, uncover the bowl. Knead the dough and cut into two smooth balls. Leave dough balls at room temperature to allow rest. Stretch dough onto two oven stones. You can sprinkle a little corn meal on the oven stones and then stretch the dough. Prepare the topping while the stretched dough rests. Preheat oven to 400 degrees F. In a large skillet, add a little olive oil, fry the onion slices, garlic, tomatoes, salt, pepper, and marinara sauce. Cook for 8 minutes. Set aside. Once oven is ready, using a large spoon, spread the topping on pizza dough. Sprinkle cheese over the toppings. Place pizza in the oven and bake for 15 minutes or an additional 5 minutes if you like crispy crust.

- 1 packet dried yeast (active)
- 1¼ cups warm water
- 1 tablespoon honey
- 3 cups white flour
- ⅓ cup olive oil
- 1 teaspoon sea salt (French)
- 3 tablespoons cornmeal
- 2 large onions (sliced thinly)
- 6 cloves crushed garlic (use less if desired)
- 6 large tomatoes (sliced thinly)
- ¼ cup homemade marinara sauce
- 1 teaspoon salt
- freshly ground black pepper
- 1 cup grated Cheddar cheese
