Strawberry Fairy Cup Cakes

Let cup cakes cool. In an electric stand mixer, whip the heavy cream and powdered sugar until thick and fluffy, about 4-5 minutes. Add pink food coloring and rose water. Gently fold in. Frost each cup cake with a small flat spatula. Smooth out the top surface of each cup cake and place a single strawberry on each cake. Place them on pretty platters, and decorate the edges of each platter or pedestal with edible flowers and leaves. Serve with an assortment of cookies and fresh black berries, raspberries, small watermelon slices, and apple slices for a delightful children's party.

I love picking strawberries at a farm nearby, when they're in season; it leaves a lasting memory for me and my kids.
