Zucchini Bread

Beat eggs with sugar, add oil and flavoring. Stir in Zucchini, nuts and coconut, then dry ingredients-gently-stir together-do not beat! Pour in greased and floured pans, sprinkle with sesame seeds. Bake for one Hour in 350 degree oven.

- 3 beaten eggs
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup oil
- 3 teaspoons maple extract
- 2 cups peeled and shredded zucchini
- ½ teaspoon baking powder
- 2 teaspoons baking soda
- ½ cup wheat germ
- 2¼ cups flour (unsifted)
- 1 cup chopped nuts
- ½ cup coconut
- ¼ cup sesame seeds (for top)

Additional Information
I like topping it before backing with salted pumpkin seeds. The salty taste of the seeds and the sweet bread together, yummy. Also a rustic look to it.
