A boiled pudding for when it's cold and there is nothing in the house!

Ingredients

Serves: 4-6

Metric Cups
  • 125 millilitres jam (or golden syrup)
  • 2 teaspoons bicarbonate of soda
  • 125 millilitres butter
  • 375 millilitres flour
  • ¼ teaspoon salt
  • 625 millilitres water
  • 325 millilitres sugar
  • 1 teaspoon ground ginger (or cinnamon)
  • 1 tablespoon vinegar
  • 1 teaspoon butter
  • 4 fluid ounces preserves (or golden syrup)
  • 2 teaspoons baking soda
  • 4 fluid ounces butter
  • 13 fluid ounces flour
  • ¼ teaspoon salt
  • 22 fluid ounces water
  • 11 fluid ounces sugar
  • 1 teaspoon ground ginger (or cinnamon)
  • 1 tablespoon vinegar
  • 1 teaspoon butter

Method

  • Boil the water, sugar, ginger, vinegar and teaspoon of butter for 3 minutes.
  • Mix the rest of the ingredients to a dough, and add to boiling syrup in spoonfuls.
  • Put on lid, turn down to low heat and cook for 5 minutes. DO NOT STIR.
  • Remove from stove and serve with cream, custard or ice cream.
