Place chicken breasts vegetables parsley pepper and salt in a pan of cold water. Bring to simmering point and simmer gently until chicken is cooked Take pan off heat and let chicken cool in the liquid. Cut up chicken into pieces and place in bowl Cheats Pimento Mayonnaise Grill the pepper until the skin is charred. Put in poly bag for a few mins then peel off skin Put pepper in food processor with garlic and water and whizz Mix with Hellman's (or similar)mayonnaise Coat chicken pieces with pimento mayonnaise Tip onto serving platter and garnish with shredded lettuce Serve with rice

For the Chicken
- 2 chicken breasts
- 1 onion
- 1 stick celery (washed and cut in 4)
- 1 small leek (washed and halved)
- 1 handful fresh parsley
- 1 pinch of black peppercorns
- ½ teaspoon powdered rock salt
For the Cheats Pimento Mayonnaise
- ½ red bell pepper
- ½ teaspoon garlic puree (from a jar)
- 1 splash of warm water
- mayonnaise
