Cream the marge and sugar together. Mash the banana then add to the creamed marge and sugar and mix together with the egg and vanilla. Lastly, mix in the flour and bicarb until you have a sloppy mixture. Pour the mixture in a loaf tin and cook at 170'C for 40 mins or until a skewer comes out clean. Once cooled slice in two and sandwich with butter cream.

Serves: cake serves 8 small slices
- 2 ounces margarine
- 5 ounces granulated sugar
- 1 banana
- 1 egg
- ½ teaspoon vanilla essence
- 5 ounces self-rising flour
- ½ teaspoon baking soda
