Season chicken with salt and pepper and start to cook the chicken in a 200C oven. Bring the wine, stock and sugar to the boil. keep stirring till sugar dissolves. Bring to the simmer and allow to reduce by 3 quarters. When chicken is almost cooked, brush glaze liberally all over chicken. Cook for a further 10 mins and serve.
