Preheat the oven to 400F/200C Prepare muffin tins. Place all the dry ingredients in a bowl and stir together. Place all wet ingredients in a separate bowl and mix well. Blend the 2 mixtures together. Fill the muffin tins halfway Bake for 20-25 minutes. Makes 24 small muffins
Introduction
A not too sweet muffin recipe that's low in fat and high in fibre. Lovely with butter and jam.

- 1 cup self-rising flour
- 1 cup wholewheat flour
- 1 cup wheat bran
- 2 teaspoons baking powder
- 1 pinch of salt
- 4 tablespoons brown sugar
- 1 orange zest
- 1 orange juice
- 1 cup peach purée
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- 1 egg
- 3 teaspoons corn oil
- 1 cup skimmed milk
