Healthy Peach Muffins

Introduction

A not too sweet muffin recipe that's low in fat and high in fibre. Lovely with butter and jam.

Ingredients

Serves: 24

  • 1 cup self-rising flour
  • 1 cup wholewheat flour
  • 1 cup wheat bran
  • 2 teaspoons baking powder
  • 1 pinch of salt
  • 4 tablespoons brown sugar
  • 1 orange zest
  • 1 orange juice
  • 1 cup peach purée
  • 1 teaspoon vanilla
  • ½ teaspoon cinnamon
  • 1 egg
  • 3 teaspoons corn oil
  • 1 cup skimmed milk

  • Preheat the oven to 400F/200C Prepare muffin tins.
  • Place all the dry ingredients in a bowl and stir together.
  • Place all wet ingredients in a separate bowl and mix well.
  • Blend the 2 mixtures together.
  • Fill the muffin tins halfway Bake for 20-25 minutes. Makes 24 small muffins
