Roasted Chicken With 40 Cloves of Garlic

Introduction

I found this in a special issue of Australian Women's Weekly celebrating the Danish Royal Wedding back in 2004. It has since been tweaked and cooked at my home very regularly. It is my favorite Chicken Roast recipe.

Ingredients

Serves: 4

Metric Cups

For the Roasted Chicken

  • 3 bulbs of garlic
  • 60 grams butter (softened)
  • 1½ kilograms chicken
  • 2 teaspoons salt
  • 2 teaspoons cracked black pepper
  • 250 millilitres water

For the Roasted Potatoes

  • 1 kilogram new potatoes (tiny)
  • cooking oil

For the Roasted Chicken

  • 3 heads of garlic
  • 2⅛ ounces butter (softened)
  • 3⅓ pounds chicken
  • 2 teaspoons salt
  • 2 teaspoons cracked black pepper
  • 9 fluid ounces water

For the Roasted Potatoes

  • 2⅕ pounds new potatoes (tiny)
  • cooking oil

Method

Roasted Chicken With 40 Cloves of Garlic is a community recipe submitted by SamIAm and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preheat oven to moderately hot (200C/180C fan forced)
  • Separate the cloves from garlic bulbs, leaving peel intact.
  • Rub butter over outside of chicken and cavity; press combined salt and pepper onto skin and inside cavity. Place half of the garlic inside cavity; tie chicken legs together with kitchen string.
  • Place remaining garlic cloves, in a single layer, in a baking dish, place chicken on garlic. Pour in water, roast chicken, brushing occasionally with pan juices, for about 1 hour 20 minutes or until cooked through.
  • Cover potatoes with oil, put on either side of chicken and roast along with the chicken the last 30 minutes of the cooking time.
