Metric Cups
  • 3 lemons (juiced and strained)
  • 5 lemon peel (finely grated)
  • butter (melted for greasing)
  • 3 tablespoons unsalted butter
  • 250 millilitres caster sugar
  • 4 medium eggs (separated)
  • 4 tablespoons self-raising flour
  • 250 millilitres milk
  • 1 tablespoon caster sugar (extra)
  • 3 lemons (juiced and strained)

  • 3 tablespoons unsalted butter
  • 9 fluid ounces superfine sugar
  • 4 medium eggs (separated)
  • 4 tablespoons self-rising flour
  • 9 fluid ounces milk
  • 1 tablespoon superfine sugar (extra)

Method

  • Preheat oven to 180ºC. Grease a 6-cup-capacity ovenproof dish.
  • Whisk unsalted butter and caster sugar in an electric mixer on medium speed until well combined.
  • Add the egg yolks, one at a time, and beat well after each addition. Add juice and rind and beat to combine.
  • Fold in flour and milk.
  • Whisk the egg whites until soft peaks form. Add the extra caster sugar and whisk until well combined. Add the egg whites to the butter mixture and fold in until just combined.
  • Pour into prepared dish. Sit dish in a larger dish half-filled with warm water and cook for 45 minutes.
