Peas, Potatoes and Mint Soup

Ok, that is very easy. First of all, put the peas in a safe container and microwave for 4 minutes. Then put everything in the food processor and 2 minutes later... Delicious hot soup!

I wanted something fast and small for a quick dinner, I had some mashed potatoes leftover and decided to use it up

Ingredients
Serves: 2
- 1 cup mashed potatoes
- 1½ cups frozen peas
- 1 cup milk
- 1 cup chicken broth
- 2 teaspoons mint
- 1 teaspoon butter
- ½ clove garlic (or a teaspoon of garlic powder)
- basil olive oil (a drizzle)
- croutons
