Veggie Quesadillas

Heat oil in a pot over medium heat. Add onion and saute about 5 minutes. Stir in garlic and oregano and saute for about 2 minutes. Add tequila, and simmer another minute until liquid has evaporated. Stir in the chopped spinach. C over and reduce the heat to medium low and steam for 5 minutes, or until wilted. Uncover and cook until the liquid has evaporated (2-3 minutes). Place 1 tortilla in a skillet over medium heat. Sprinkle with 1/3 of the cheese, top with 1/3 of the spinach mixture, dot with sour cream and salsa and the second tortilla. Cook 3-4 minutes per side or until browned. Repeat with remaining ingredients. Slice into wedges and serve.
Introduction
Well, I am from California and vegetarian and Mexican food are a staple here. Here is one of my favorite combos of the two foods. And a very good way to get the stubborn to enjoy spinach.

- ¼ cup tequila
- 12 ounces chopped spinach (or Swiss chard Fresh or frozen)
- 6 flour tortillas (10-12'')
- 1 cup grated monterey jack cheese
- ¼ cup sour cream
- 1 cup salsa
