Prepare the vegetables. Chop up into quite big pieces Prepare the globe artichoke by trimming the stem and cutting off the spikes. If the g.a is very big, you can cut it down the center. Put all these veggies into a roasting dish. Add some oil, a little salt and loads of pepper and toss it all around so everything is covered. If the roasting dish has a lid, use this for the first 15 mins or so, then remove it. If there is no lid, use some foil to cover the dish. Put this into a hot oven in the middle shelf. It should be ready in around 45- 60 mins. Serve with rice, couscous or quinoa. It tastes delicious with a bit of lime or lemon juice squeezed over. And of course you can use any vegetables that you like.
