Chilli Chicken Miso Ramen

Marinade the chicken in the Mirin for as long as you can be bothered, then shallow fry in a tiny bit of oil. Chicken should have a slightly crispy outer from the sherry. Meanwhile cook the noodles till they're done the way you like them. Make up the Miso with boiling water to taste (though it should be fragrant and delicate, not like bouillon!!). Bring the Miso to simmer, take it off the heat, add the noodles then chuck everything else on top, the heat from the miso will wilt the greens/coriander/scallions. Finally slice the chicken across the grain diagonally and place on top of everything else, and add a squeeze of lime and a splash, dollop or a down right load of chilli sauce depending on how hot you like it. Oh and have some tissues at the ready, it clears your sinuses even without the chilli.

Does what it says on the tin! Could be a soup course I suppose, but it's really a meal in itself. Super simple, cleansing and healthy!!
I don't like using regimented quantities, depends how I'm feeling/how many people, use your own judgement. Allow one breast per person, unless you're a chuffa.
