Grind onion, ginger and garlic together to make a paste. Wash rice and keep aside for 15 min. Cut the veggies into small pieces. Heat oil, and first fry all the veggies lightly, take it out and leave it on a tissue paper. Next lightly fry the rice as well. Add bay leaves and Garam Masala to the oil, and the onion garlic ginger paste. Fry till it changes colour. Next add the rice and the veggies, salt, sugar, and red chilli powder. Add water (2 cups rice: 4 cups water) and let it cook. Once done, add some ghee and Garam Masala powder for fragrance (this is optional).

- 500 grams potatoes
- 1 large cauliflower
- 250 millilitres green peas
- 500 millilitres rice
- 2½ centimetres fresh ginger
- 1 onion
- 1 tablespoon garlic
- 2 bay leaves
- garam masala
- red chilli powder (to taste)
- salt (to taste)
- sugar (to taste)
