Make a caramel with the sugar and a tbsp water. Take off heat and add the butter (cut into pieces) until melted then add the chocolate (a broken into pieces) Add the yolks, one at a time. Stir the mixture until all ingredients are incorporated. Whisk the whites with a pinch of salt and incorporate them delicately. Bake for approx. 25 mins at 180°c
