Rich Chocolate Mousse Tart

Make pastry in usual way, place in fridge for 1 hour to rest. Melt chocolate and butter in the microwave on "defrost". Mix eggs, yolks and sugar in mixing bowl and whisk until the mixture doubles n volume. Line the tart tin with the rolled out pastry and cook for about 15 mins until cooked. 150°c fan or 170°c Quickly stir in the melted chocolate + butter. Pour the filling into the tart tin lined with pastry. Bake for a further 12 mins or until the filling has risen and is just firm to the touch. Allow to cool completely.
