Cook the pasta for the required length of time. Start to sweat the onions and pancetta. Throw in the chillies for flavour. Add the passata and stir, let it simmer for 5-10 minutes. If the sauce is too thick and dry, add some of the water from the pasta. Drain the pasta and add the parsley to the sauce. mix everything in a big bowl. Serve and garnish with extra parsley and parmesan on top.

- ½ bottle tomato passata (rustica)
- 1½ large onions (sliced)
- 1 packet pancetta (a large packet, or streaky bacon)
- 3 small bird's eye chillies (chopped)
- fresh flatleaf parsley (save some to garnish)
- Parmesan cheese (fresh, grated - to serve)
- 17⅔ ounces penne pasta (lisce)
