Pasta in a tomato sauce with bacon and onions!

Ingredients

Serves: 4

Metric Cups
  • 500 grams penne pasta (lisce)
  • ½ bottle tomato passata (rustica)
  • 1½ large onions (sliced)
  • 1 packet pancetta (a large packet, or streaky bacon)
  • 3 small bird's eye chillies (chopped)
  • fresh flatleaf parsley (save some to garnish)
  • Parmesan cheese (fresh, grated - to serve)
  • 17⅔ ounces penne pasta (lisce)
  • ½ bottle tomato passata (rustica)
  • 1½ large onions (sliced)
  • 1 packet pancetta (a large packet, or streaky bacon)
  • 3 small bird's eye chiles (chopped)
  • fresh italian parsley (save some to garnish)
  • Parmesan cheese (fresh, grated - to serve)

Method

  • Cook the pasta for the required length of time.
  • Start to sweat the onions and pancetta. Throw in the chillies for flavour.
  • Add the passata and stir, let it simmer for 5-10 minutes. If the sauce is too thick and dry, add some of the water from the pasta.
  • Drain the pasta and add the parsley to the sauce.
  • mix everything in a big bowl.
  • Serve and garnish with extra parsley and parmesan on top.
