Vegan Maple Syrup Cookies

Preheat the oven to 175 C. Cream the sugar with the margarine (you can use butter for a richer flavour, though the veganness is gone then), then add the applesauce, vanilla and maple syrup and mix well. Sift together the flour, baking soda and salt. Add the dry ingredients to the wet ingredients and stir until everything is combined. Take little balls of dough and put them on your greased cookie sheet, about 2 inches apart. You don't have to flatten them. Bake for about 8-10 minutes and let them cool on a wire rack.

- 2 tablespoons apple sauce
- ½ cup maple syrup
- 1 teaspoon vanilla extract

- 11 ounces flour
- 1 pinch of salt
