Spicy Lentil and Chorizo Soup

Heat a large saucepan over medium heat. Add the oil, onion, garlic, chorizo and chilli and cook for 8-10 minutes or until the onion is tender and the chorizo is golden. Add the lentils, tomatoes , stock, salt and pepper, bring to boil and cook for 15 minutes or until the lentils are tender. Serve with bread. Serves 4

I swapped the chicken stock for vegetable stock and replaced the chorizo with vegetarian chorizo - it was yummy!
Ive made this loads of times and it taste amazing. So simple to do. One of my all time favs now & freezes well.
