Preheat the oven to 180ºC (350ºF, gas 4). brush a 1litre ovenproof dish with oil or melted butter. Using an electric whisk beat the butter lemon rind, sugar and egg yolks until light and creamy. Sift in the flour and stir until just combined. Add the juice and milk and stir to combine. Place the egg WHITES in a small dry bowl. once again using electric beaters whisk to form firm peeks. Fold into the pudding mixture until only just combined. Spoon into the prepared dish and put the dish into a larger dish filled with boiling water which comes up to about one-third of the way up the side of the larger dish, bake for 40mins or slightly less if you have a hot oven. dust with icing sugar and serve with cream or ice-cream. make sure you spoon some sauce over each serving and enjoy!

Great recipe worked perfectly in a 1 litre loaf tin which was all I had. Soft fluffy sponge and thick tangy sauce.
