One Pot Pork Chop Supper

Introduction

A variation on the classic Greek Pork & Potatoes in the oven. I've added some extra flavours and some vegetables I had lying around to make this an all-in-one-shove-it-in-the-oven-and-forget-it dish. I limited the oil to 1 tablespoon for dietary reasons, but if you want to be more Greek, add lashings of it!

Ingredients

Serves: 2

Metric Cups
  • 2 pork chops
  • 1 clove garlic (a fat clove)
  • 1 teaspoon wholegrain mustard
  • 2 teaspoons honey
  • 3 potatoes (washed, scraped or peeled and cut into large wedges)
  • 1 teaspoon kalamata oil
  • 1 large courgette (cut into 8 wedges)
  • 1 red onion
  • 1 red florini pepper (sliced to match the onion)
  • 1 green florini pepper (sliced to match the onion)
  • 1 tomato (diced)
  • sea salt
  • freshly ground pepper

Method

One Pot Pork Chop Supper is a community recipe submitted by StoupaTart and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Grind the garlic with plenty of salt. Add mustard & honey. Spread this over both sides of the chops and place in a wide oven-proof dish or roasting tin.
  • Season the potatoes and coat in the olive oil. Put in the dish around the chops.
  • Spread the remaining vegetables around and on top, with plenty of seasoning. Add about ½ a cup of water.
  • Put in the oven & turn it on at 200° C. Go to your local pub or ouzeri for an hour and a half. Don't accept that second jug, remember you have food in the oven!
