Easiest Veg Curry

Introduction

This is a great last minute dinner to use up your odds and ends...anything goes!

Ingredients

  • 1 finely chopped onion
  • 2 teaspoons tikka paste
  • ½ vegetable broth
  • 1 handful green beans
  • small potatoes
  • tomatoes
  • 2 red bell peppers

Method

  • Boil potatoes. I use tiny new pots, but small pieces also works a treat
  • Blanch your tomatoes to remove the skins (cut out the stalk end and score the other side and immerse in boiling water for 1min then into cold. Skins will peel away easily)
  • Roast or grill peppers to remove skins
  • Sweat onion in a little oil without colouring
  • Add tikka paste Add stock and all your veg
  • Allow to cook beans and heat through other ingredients. More water may be needed at this stage
  • Add potatoes last just to heat, over cooking them will cause them to fall apart
  • Season
  • Last time i cooked this i sprinkled with crispy bacon, only cos i had some to use, and it was lovely. You could also add cream for a thicker, milder curry
