Lime Sorbet

Dissolve sugar in water over medium heat, without stirring. continue to simmer till you get a syrup of one-string consistency. take off heat and add the rest of the ingredients. Freeze till semi-set (around 3 hours) and churn in food processor. Return to freezer and churn again once set. Re-freeze. Repeat the above step once more. Decorate with lime rind, and serve up in scoops.

Serves: approx 8-10 people
- 1½ cups sweet lime juice
- 5 cups water
- 2½ cups granulated sugar
- 4 tablespoons lemon juice
- 2 grated lemon zest

Additional Information
You could also use an ice cream maker for the above. just follow the manufacturer's instructions. It seems like a lot of work, but is actually very simple to follow and the slushy, creamy delight is the perfect alternative to low- cal ice cream :)
