Introduction
This dish is simply chicken and vegetable parcels baked in the oven. This looks like an impressive dish when served, but in truth there is minimal preparation, cooking and washing up, which makes it equally ideal for a dinner party at which you actually want to sit down and spend time with your guests, or for a simple healthy meal alone when you have just gotten home from work, dead tired. The other good thing about this dish is that the ingredients are cheap and it's easy to buy the exact amount of ingredients you need, and scale up or down, so that there is little waste.

- 1 chicken thigh fillet (or breast - per serving)
- ½ rasher bacon
- ½ potato (peeled and sliced into 2mm rounds)
- 3 green beans (snapped into 2-3 pieces)
- 1 mushrooms (sliced)
- fresh spinach (a few leaves)
- 2 tablespoons chicken stock (or vegetable stock, waxed baking paper and kitchen twine)
