Breaded Chicken Roast

Pre-heat oven and lightly grease your roasting tin. Trim chicken halves of excess fat, and pat dry. Season with a little salt and pepper and then lay down nicely in the roasting tin, skin up. In a bowl, mix well butter, garlic, thyme leaves, olive oil, lemon juice, cheese and coriander leaves. Season with salt and pepper. Paint generously the skin of the chicken with the butter mixture. And then sprinkle with the crushed graham crackers. The butter on the skin should be completely covered with the lovely bread crumbs. Then bake at medium to low temperature for about an hour. It is so amazing.

- 1 medium chicken (cut in half)
- 4 tablespoons butter
- 4 cloves finely minced garlic
- 1 handful chopped cilantro
- 1 teaspoon dried thyme
- 2 splashes of extra virgin olive oil
- 1 teaspoon lemon juice
- ½ cup grated Parmesan cheese
- salt
- pepper
- crushed graham crackers
