In a bowl add a little Worcestershire sauce and tabasco to Quark and mash down with a fork. Add ketchup and combine. Add the milk to slacken and stir well to achieve desired consistency. Taste and add more of each of the sauces as required. Season with salt and pepper and a squeeze of lemon. Spoon over prawn cocktail.
Introduction
I created this sauce during a craving for a prawn cocktail, but being on a diet a mayonnaise rich sauce was a no-no. So I had a little play in the kitchen and this was the result. I will admit that this cannot recreate the creaminess of the real deal, but once spooned onto prawns and crisp lettuce I forget that it is a substitute. All measurements are very approximate, it is more a matter of finding a satisfactory consistency and tasting as you go.
