Introduction

This is my own version of a spanish omelette. Its made with cubed fried potatoes and an egg which is cracked in and mixed in at the end to resemble scrambled egg. Its great stuffed into a toasted pitta with salt and pepper and lemon squeezed over. A great lunch!!

  • potatoes (peeled and cut into 1.5 cm cubes)
  • 2 eggs
  • ½ onion (finely chopped)

Method

  • Fry onion until translucent and nearly getting brown.
  • Add the potatoes and stir, fry for about 10 mins on medium heat until golden and softened.
  • When they are done crack the eggs in and quickly stir to scramble. Add salt and pepper and serve with lemon squeezed over.
