Ingredients

Serves: 2-3

Metric Cups
  • 397 grams macaroni
  • 113 grams Cheddar cheese
  • 28 grams flour
  • 315 millilitres vegetable stock
  • salt
  • freshly ground pepper
  • 14 ounces macaroni
  • 4 ounces Cheddar cheese
  • 1 ounce flour
  • 11 fluid ounces vegetable broth
  • salt
  • freshly ground pepper

Method

Low Fat Macaroni Cheese is a community recipe submitted by Trkishdelight and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Cook the macaroni according to the packet instructions, drain and keep warm. Grate the cheese.
  • In a pan whisk the sauce flour into the vegetable stock. Add half the cheese, season well and bring to the boil slowly, stirring constantly. Simmer gently for 3 minutes until you get a smooth and silky sauce.
  • Stir the macaroni into the cheese sauce, transfer to a heat-proof dish and sprinkle over the remaining cheese. Place under a hot grill until the cheese is bubbling, season to taste and serve
