Broccoli and Lemon Soup

Heat oil in large sauce pan and cook the onions until they are soft and beginning to change colour Add the garlic and broccoli and mix them into the onions Then pour in the stock season with salt, pepper and a grating of nutmeg Bring to a simmer. Half cover the pan and cook until the thickest piece of broccoli is tender Let it cool a little liquidise with the lemon zest Pour back into the pan and taste adjust the seasoning Gently reheat and serve in bowls topped with a spoonful of creme fraiche and the toasted almonds
Introduction
I suppose this is more of a spring summer dish as I originally made it from young tender broccoli earlier this year. But I love it all year round

Serves: serves 6
For the Soup
- 3 tablespoons extra virgin olive oil
- 2 chopped onions
- 2 cloves chopped garlic
- 1 pound trimmed and chopped broccoli (use stalk)
- 1½ pints chicken broth (or vegetable)
- sea salt
- freshly ground pepper
- 1 grinding nutmeg
- 1 lemon zest
For the Garnish
- 6 teaspoons creme fraiche
- 2 tablespoons toasted sliced almonds
