Serves: 10-12

Metric Cups
  • 500 grams dates (stoned)
  • 200 grams ground almonds
  • 1 teaspoon almond extract
  • 6 eggs
  • 2 tablespoons cocoa
  • 1 packet chocolate chips
  • 2 tablespoons honey
  • 18 ounces dates (stoned)
  • 7 ounces almond meal
  • 1 teaspoon almond extract
  • 6 eggs
  • 2 tablespoons unsweetened cocoa
  • 1 packet chocolate chips
  • 2 tablespoons honey

Method

  • PRE HEAT THE OVEN TO 160 OR GAS MARK 3
  • BOIL THE KETTLE, GREASE AN SQUARE OF ROUND CAKE TIN AND LINE WITH BAKING PARCHMENT.
  • EMPTY THE DATES INTO A BOWL AND POUR ON THE WATER AND SET ASIDE FOR 15 MINS.
  • IN A CLEAN BOWL BEAT THE EGGS AND ADD THE ALMOND EXTRACT, COCOA POWDER AND HONEY, MIX WELL.
  • DRAIN THE DATES AND BLEND TO A PULP ADD THE REST OF THE MIX AND FINALLY STIR IN THE GROUND ALMONDS.
  • POUR THE MIXTURE INTO THE LINED TIN AND BAKE FOR 45 - 55 MINS( THIS IS A DENSE CAKE THAT WILL NOT RISE) TURN ONTO A COOLING RACK
  • CUT INTO SQUARES AND SERVE WITH CREAM OR CRÈME FRAÃŽCHE.
